Food allergy test for various milk allergens

Over the last three decades, the incidence of allergies has doubled every 10 years and thus the incidence of allergies in the population now reaches 20%. Men are twice as likely as women to suffer from allergies.

The main food allergens (93%) are cow's milk, chicken eggs, fish, citrus fruits, chocolate, nuts, crustaceans and wheat.  In children, chicken meat, beef can easily be added to the list.

The allergenic properties of a food product are determined by its protein concentration.

Food colours, additives used in food preparation provoke - PSEUDDOALLERGIC REACTIONS (similar to allergies)).

Manifestations of allergies, to date - it is not only rashes on the skin, but also nausea, vomiting, diarrhoea and many other, at first glance, "unrecognisable" signs.

The main criterion for diagnosing allergy is the identification of an allergen - a substance to which the body forms specific complexes - antibodies, which, if the "conditions" are right for them - trigger the disease - Allergy.

Food allergy is diagnosed by determining total IgE and specific IgE to various allergens.

Cow's milk consists of 20 proteins with pronounced allergic properties! Therefore, it is necessary to test not only for milk but also for its proteins!

Casein (in milk of almost all animals, cheeses), α-lactalbumin (may cross-allergenise to beef meat proteins), β-lactalbumin (milk of all animals, cheeses), bovine serum albumin (milk of cattle), β-lactoglobulin (milk of all animals, cheeses), β-lactoglobulin (milk of all animals, cheeses).

Milk is the leading allergen in children. Sensitisation can occur in utero, and in atopic dermatitis 90% of cases of atopic dermatitis are caused by milk. Onset of the disease from 1 week of life to 6 months of age.

In adults, true milk allergy is rare, and poor intolerance is an evolutionary pattern, because after puberty, the production of enzymes that break down milk proteins decreases.

It should be remembered that the entire spectrum of milk allergens is found in condensed milk, powdered milk, evaporated milk, evaporated dough, white bread, ice cream, chocolate, mayonnaise, etc., where milk is present.
