Beta vulgaris produces sugar from its large white conical taproot. About a third of all sugar produced worldwide is made from this plant, but this sugar is considered worse than cane sugar because it does not crystallize so well and is absorbed faster by the body.

Beetroot and its relatives are grown all over the world for human and livestock nutrition. The seeds, in addition to some isolated culinary purposes (as in India and Pakistan), serve as animal feed. Sugar beet seeds can rarely cause allergy symptoms in sensitized people, mainly in professional settings such as animal feed production and farms.
